With Valentine’s just around the corner I thought today would be a perfect day to share one of my favorite dessert recipes. You can make it for a loved one, or you can make it for yourself. Either way you’ll be glad you did, because this huge cookie is the bomb-dot-com. It’s a perfect dessert to impress company with, or to make after a long hard day to lift your spirits. 😃🍪
Seriously though, who doesn’t love chocolate chip cookies, especially when they’re giant and covered with melted marshmallows?! If you don’t, I’m sad you’re missing out on such a wonderfully delicious treat.
Also, I have never loved any kitchen tool as much as I love my cast iron skillet. I shall have to do a post about it very soon, because I feel like I can write so much about it. Don’t know why I didn’t get one sooner!
Before I go further though, I must give credit where credit is due. Shout out to my awesome sister Steph who came up with the original skillet cookie that inspired this recipe! If it weren’t for her, I would’ve never known the magic that a giant skillet cookie holds. So when you make this, think of my awesome sister who lives in Canada and makes the yummiest food. I wish she lived closer so she could make me her yummy food all the time. This recipe is also near and dear to my heart because when I was growing up, my mom made a version of this whenever she had leftover cookie dough and we called it “Chocolate chip pizza.”
On to the recipe…
Giant Skillet Chocolate Chip Cookie
- 1 C flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 6 Tbs melted butter (salted or unsalted both work)
- 3/4 C brown sugar
- 1 egg
- 1 tsp vanilla
- 2/3 – 1 1/2 C chocolate chips (throw in as many as you want. I usually eye-ball it😉. Also, I like to do half milk chocolate and half semi or dark)
- 1 C mini marshmallows (or 5-10 large ones cut in half)
Preheat oven to 350 degree Fahrenheit. Grease cast iron skillet (mine is a 10.25 inch one. If you don’t have a cast iron skillet just use a normal oven safe skillet that’s a similar size, or you could use a pie pan too. The cast iron skillet is going to look the coolest though, and make the best cookie 😉).
Whisk wet ingredients and brown sugar until smooth & creamy. Add dry ingredients (except choc chips and marshmallows). Fold in chocolate chips. Add batter to skillet and smooth around in an even layer.
Bake for 15 minutes (or until cookie looks almost done. All ovens are different. Sometimes it takes mine a little longer than 15). Take skillet out and carefully spread marshmallows on top. Put back in the oven for about 5 more minutes, then turn the broiler on until marshmallows brown (CAREFUL! Once broiler is on the marshmallows brown super fast. I usually watch it like a hawk when the broiler is on). Remove from the oven. Let cool for a few minutes, and then slice like a pizza and enjoy!
