Y’all, have you ever tried cookie butter from Trader Joe’s? If you haven’t you need to ASAP. If you have, then you understand my need for this delectable substance. It’s a yummy spread kind of like the texture of nut butter, but made from speculoos cookies (Speculoos cookies are kinda like a hybrid of ginger snaps, gingerbread, and shortbread). If y’all doubt my love for cookie butter, know that I once dressed up AS cookie butter because it means so much to me. I spent hours making the costume, and it turned out pretty awesome if I do say so myself. 🙂
The sad part is, the original cookie butter isn’t too healthy for me right now since I’m trying to avoid sugar and mixing carbs and fats. So I came up with a healthier version of my favorite treat from TJ’s. I made this on a whim this morning because I’ve been craving all the bad food lately. This recipe from pinterest inspired me, although I like my version better because it’s simpler, and oh so delicious!!
This “cookie butter” is naturally sweetened, and made with almond butter so it’s low carb. It’s also gluten free, THM, keto, and vegan. A perfect yummy treat by the spoonful, or its great as a lovely topper to pancakes, waffles, or french toast (I literally just ate it on french toast 😁).
Healthy Cookie Butter
1 C natural almond butter (I like creamy, but crunchy would work).
1 1/4 Tbsp powdered Pyure Stevia*
1 1/2 tsp cinnamon**
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp cloves
Grind sweetener in coffee grinder till powdered. Mix all ingredients thoroughly with hand mixer. Put cookie butter in a cute mason jar. Refrigerate. ENJOY!
*this is a blend of Erythritol and Stevia that I like. Feel free to sub your natural sweetener of choice here. I think you could also sub maple syrup here, too. Also, this recipe is in the S category, for those following THM.
**I loosely measured spices here. Feel free to add more/less to get the right flavor for you!
