Recipe: Salsa Chicken

Do you have a go-to, or staple meal for your family? One that is always yummy and works great when you need to take a meal to someone or have company over? This salsa chicken is that meal for us. I love it so much because it’s simple and easy to prepare.

We all love this recipe, and every time I make it for other people they ask for the recipe, so I figured it was time to dedicate a whole Youtube video to it. It’s not exact measurement wise, so just play around with it and tweak it until you like it. Also, if you follow Trim Healthy Mama this could be used in either an S, or E setting.

Salsa Chicken:


  • 4-6 chicken breasts (frozen or fresh)
  • 1 jar of your favorite salsa (more or less to taste, as long as each breast is covered with salsa.)
  • Salt and pepper to taste
  • Garlic powder to taste
  • Taco seasoning to taste
  • 4 oz cream cheese (I use the 1/3 less fat, but regular is good too)
  • Juice of 2-3 limes
  • 1/2 cups chopped cilantro 


Add chicken, salsa, and spices to crock pot. Cook on low 6-8 hours or high 3-4 hours, or until chicken is tender enough to shred (if using fresh chicken, adjust time accordingly). 

Remove chicken and shred. Add cream cheese and stir until melted. Add lime juice and cilantro.

Serve in tortillas with your favorite taco toppings, or taco bowls, or over salad.
